Though I like the part where they described slaughtering dogs with and without fear to feed to rats. That sounds like something a fully accredited research center would do.

Stress and fear do play a part in how the meat is. Due to the fact more blood will gether in the mucles, and stay there after the deed is done. Some say this will make the meat much thougher to cook. This is atleast what iv been told by my uncle. He is a cook/butcher.

Anyway, if its true or not animals deserve to atleast die a stress free death. No need to agitate them. Even most here would like death to be suttle, and not a strainfull event.

Considering the centuries of hunting and farming that have gone on in human history, and the number of kills both in hunting and in slaughtering where it can be safely assumed that there was been some adrenalin involved before the animal died, and the seeming lack of documentation of this "bitter taste" in historical works, JUST ON THAT BASIS ALONE and without seeking any actual scientific evidence, I'd have to say that whoever told you that was probably full of horseshit.

Does happen with some animals. Or the meat tastes srtange if the animals have been too stressed. Not sure about the biological reasons but for an example the White-tailed deer should preferably not be chase hunted with chase dogs.

hell, when you bring in common sense, it's horseshit. Most cattle are slaughtered in a line and the cows behind the ones getting their throats slit can see what's going on and evidence suggests they understand what's happening. So if "fear" made meat taste bitter, then upwards of two-thirds of all beef of any kind would taste bad. Considering that I'm pretty much a carnivore, hehe, and I've never had a bad-tasting steak (unless something like rot or freezer burn was involved), I'd say that the whole "fear flavour" thing is total and complete crap.

Even if it were true, would it not begin to taste more exquisite the more bitter it became, in spite of it's difference in taste from that of a fine cut of beef? I would think the bitter taste would imply the creature suffered a more horrific, tortured, and agonizing death, and by that be more exciting, the more bitter the meat.
